Can I travel by train from Ulaanbaatar to Beijing, stay in Beijing for 4 days and then fly to Warsaw

And if I fly from Mongolia to Beijing? (then the same - stay in Beijing for 4 days and after then fly to Warsaw via Moscow)?

Mongolia train needs a visa. Only the West railway station is eligible for TWOV. Immigration from Mongolia happens at China border which is not a valid entry/exit port for TWOV.

I have a similar Marlena and was all ready to buy a tourist visa. It seems I might not have to? How easy is it to get this visa at the airport in Beijing?

You cannot get a visa on arrival at Beijing. But if your itinerary and nationality qualify then you don't need one.
