Landing in Hong Kong

I have bought a ticket landing in Hong Kong and flying out of Xiamen.

But I have not booked tickets from Hong Kong into Mainland China.

Is this OK? Or do I need to show proof of tickets going into Mainland China?

That's up to the ground staff of the airline with which fly into HK whether you need to provide a confirmed ticket departing HK. Some airlines' check-in agents will insist to see an onward ticket before handing you your boarding pass while others may not do so. If you don't need a visa for HK, then you can just buy a refundable one and cancel it after going through HK immigration.
