Las Vegas flight to Beijing for 3 nights then to Tianjin to embark on cruise

one stop in Hong Kong from 7am till 2am in the morning. Am I applicable for a 144 hour visa waiver?

So you will take this route: Las Vegas - Beijing - Tianjin - Hong Kong? If so and you hold a US passport, you can enjoy the 144hrs visa waiver policy.
