Seattle to Shanghai to Guangzhou on a Delta ticket, Guangzhou to Vientnam on a China Southern

I am German citizen intending to travel to Guangzhou on Delta (changing planes in Shanghai) and then leave Guangzhou on a separate ticket for Vietnam. Is this possible under the 72 hour visa free transit option?

Separate tickets are fine. But as you have two stops in China, you are immediately limited to 24 hours transit without visa.
