Unfortunately, this itinerary is not eligible for 144 or any other visa free transit. The reason is simple, you cannot visit two mainland Chinese cities/regions consecutively. You need a visa.

Exactly. The second itinerary: London - Beijing - Paris is definitely fine and you will be allowed to stay in Beijing and its surroundings for 144 hours visa free transit. Just to inform you that the time allowed for a visa free transit starts from the next day from your arrival, i.e. in case that you arrive on Tuesday in the morning, the counting of 144 hours begins on Wednesday at 00:01. Like this, you will have to depart until Monday at 23:59.

You don't have to make any announcements to anybody and you will mention your visa free transit for the first time at check-in counter in London. You will tell them that you fly visa free and you will also show them your flight tickets in hard copy that will support your claim. You will be allowed to board the plane and after you have landed in Beijing, you will approach the counter fill out the form and hand your documents to Chinese authorities. Of course, it is highly advisable to have also your hotel booking in hard copy. They (Chinese authorities) will stamp your passport and you will be free to exit the airport and to explore the area until your flight departure for Paris.

Please, just use correct terminology to avoid any possible misunderstandings. You will travel visa free and not free visa. Upon arrival in Beijing you will not get any kind of visa, but you will stay in China visa free. Basically, pretty simple. One more detail... Your flights should be nonstop.
