Hong Kong-Guangzhou-Hong Kong isn't a transit, so it doesn't qualify for 144 hours transit without visa.

You can change your itinerary, but really slightly and you will be qualified for 144 hours visa free transit in Guangzhou and entire Guangdong province. Well, everything is just fine until your return from Guangzhou. Actually, as the previous poster has mentioned, you are not allowed to return directly to Hong Kong because you have arrived from Hong Kong to Guangzhou. In order to bypass the problem and in accordance with recently adopted rules for 144 hours visa free for Guangdong province, I suggest that you change your itinerary using Macau instead of Hong Kong for your return itinerary from Guangzhou. Having in mind that you will need a ticket that you will have to show to relevant authorities, you will buy a ferry from Shenzhen to Macau in advance, i.e. before your departure from Melbourne. The port is called Shekou Sea Port and is eligible for 144 hours visa free scheme. The procedure is following:

1. Take a high speed train from Guangzhou to Futian Shenzhen station. The ride takes less than an hour.
2. From Futian station take a metro line number 2 to Shekou Port metro station from where you will reach Shekou Ferry Port
3. You will have a ticket bought online through TurboJet ferries website and you will use that particular ferry to travel to Macau
4. After your arrival in Macau, you will just use another ferry to transfer to Hong Kong and you should have in mind that you can take a ferry directly to Hong Kong airport

Now, it maybe seems a bit complicated, but in reality it is not. People traveling from Hong Kong to Guangdong province and wishing to use 144 hours visa free travel will do exactly like this. Of course, there are probably other options, but this one is totally safe because you will have a ticket in hands that will show your way out of mainland China to Macau.
