Multiple 144 hour transit visas

Hi
Can I got to PEK, stay for 3 days, fly to Japan for a week, come back to PEK and stay for 5 days, before then flying on to South Korea?

Yes, you can use 144 hours visa free transit twice, but the first country from where you will arrive to Beijing, that you have failed to name, cannot be Japan. Japan is fine as a departure point for your second arrival in Beijing.
