How many bottles of beer can I take to China without declaring?

There is no limit of beer, but pay attention to the weight limit of the luggage.

According to the content on official website, the items over the limit of 1,500ml or above of alcoholic drinks (containing 12% or above alcoholic content) shall be levied duty upon. So you can take the beer less than 1,500 ml for free.
