About:Shenzhen North Railway Station

Do you think 1 hour is enough for us to change trains in Shenzhen North?

Especially we are catching the train to HK?

Yes, 1 hour is surely enough as long as you have the paper tickets in hand. You can collect the paper tickets for the second trip to HK in advance at other station first. In this way, 1 hours is surely enough. The boarding process for HK direction is the same as other routes within China mainland.
