About:72-Hour Visa-Free Transit

Round trip cruise

I think the question about Phuket gave me my answer, but I'll ask to be sure. Going to fly to Shanghai, catch cruise ship two days later, go to Japan, return to Shanghai and leave same day for Korea. Each stop in China is a transit to another country, so it looks like that should qualify. Right?

Unfortunately, you are not allowed to do that. Visa-free transit with stay in China that exceeds more than 24 hours can be done only by using air transport.

You are allowed to do that. You don't have to arrive and depart by air.

Joseph is right. In fact, that's one of the few scenarios where you will be permitted to leave the airport regardless of how long your transit time is (even when it's less than 8 hours and you don't have a hotel reservation).
