What are the requirements for someone who wants to work as an au pair in China? and which entry permit is suitable?

You may need to apply for work visa for that. You should prepare those documents including your passport and copy of its data page, a completed application form, recently-taken passport-style photo, and a work permit from your employer as well as other required documents.
