About:240-Hour Visa-Free Transit

Multi-city: Sydney (layover in Seoul) > Shanghai > Seoul (ICN)

Hi,

I will be flying from Sydney > Seoul (layover: 1h 15m) > Shanghai and flying out > Seoul.
All the flights will be provided by Korean Air.
I am wondering if I will be eligible for the 144-hour free transit in China although there is a layover in Seoul?

You won't be eligible as that's not transiting in Shanghai.

Really? Why do you think it is not a transit in Shanghai?
My flight is from Sydney to Shanghai (transfer* in Seoul) and I will be staying in Shanghai for 5 days and flying out to Seoul. Is it still not regarded as a transit?
*I was confused about the difference between layover and transfer.

SYD-ICN-SHA-ICN means that you are transiting in Incheon. Doesn't matter how long your ICN stop is, your stop means that your route will become ICN-SHA-ICN so you are not transiting in Shanghai. Transfer and layover are the same thing in the eyes of immigration.

Landing immediately before and after Shanghai cannot be the same country. Its a different definition of transit than you are used to.
