About:Chinese Embassy in South Korea

Appointment. I need to make an appointment to apply for an S1 visa for my family.

We are American and I have a Z. We are currently living in Beijing. We are traveling to Seoul in September 29th.

If your families don't have valid residence permit in South Korea, I'm afraid you cannot apply for S1 from the CVASC in there. If you and your families are currently in China, you can try to changer their current visa into S type at the exit and entry administration of the local PSB.
