In that specific case do I need to apply for a Visa or will the 144hr transit work? Would I have to apply for the 144hr both ways?

The 144-hr transit will do. There's no "application" involved but they do make you fill out a short form. Also keep in mind that BJ must be your only stop in Mainland China and any other stop within the Mainland would render you ineligible.
