Hello, my cousin is coming to visit me in Beijing.He has a round trip ticket from Chicago to Beijing for 2 weeks.  If we leave Beijing before the 6 days is up and go to another country, can he get another visa-free visit when we return to Beijing?

Yes if he leaves Beijing to another before the first 144 hour transit without visa then he can return for another. Chicago > Beijing > hong kong is allowed one Hong Kong >  Beijing > Chicago is allowed one as well
