Which Hong Kong Octopus Card is best for us?

We stay 4 nights in HK.
We need a one way airport transfer by metro or bus to Dorsett Mong Kok hotel (Kowloon)
3 days of unlimited metro travel
Starferry one or two times
1 day to Macau (need to buy separate boattickets I think)

The 3 days needed are sequent. Macau comes after that.
The last day we need another day transport to go to Po Lin monastry and to exit to shenzen at the end of the day
