1. Neither Shanghai nor Beijing has the 72h twov anymore, the 144h policy is in service now.
2. You can´t leave one specific area to go to another specific area. Either you stay in the Shanghai area or in the Beijing area but not in both.
3. Where do you come from and where do you go after China? Both countries must be different but you didn´t mention anything.
4. The 144h twov is not a visa so you can't apply for a visa. It's a free transit.

Thank you for this Thomas. We are flying London/Shanghai on the Inward leg and Shanghai/Auckland on the outward leg. From your reply, I understand we either need a 3 month visa to go Shanghai/Beijing/Shanghai or apply for the 144h twov and stay in the Shanghai area only.

On your flight from London to NZ via Shanghai you just can stay in the Shanghai area.
If you wanna go to Beijing you have to apply for a tourist visa in advance.
I would recommend you a tourist L as Beijing has more nice places to visit as Shanghai but the water towns around Shanghai are nice as well and Huangzhou is worth a visit too.
It's up to you, have a nice trip.
