Should we obtain VOA or 72 Hours Free transit? We hold Indonesia entry permit and would like to have Holiday in Hong Kong and continue to Shenzen and Shanghai.

You did not indicate which country's passports you hold. Indonesian passport holders are eligible for neither and must obtain a tourist visa. Even if you hold an eligible passport you would still need a visa anyway as 144-hour transit does not allow travelers to visit more than one specified regions.
