Can you fly to Hong Kong from the UK then visit Shanghai for a couple of days in the middle of the trip and then fly back to Hong Kong for a few more days before returning to the UK on teh 72 our Visa free system?

Of course not. Hong Kong-Shanghai-Hong Kong isn't a transit. You need a visa for that.
