Winter Availability for Boat Rides/River Cruise

I am booking a family trip to China for January that includes from 14 years old to 80 years old. There are three optional excursions that we are considering and would like to know if they operate in January and what the experience is in January. Is it too cold on the boat to enjoy the scenery outdoors? Is it foggy? Is there an indoor cabin where you can see the scenery from or do you need to be out on deck to see? etc....

These are the optional excursions where we would be "on the water":
Huangpu River Night Cruise (Shanghai)
Grand Canal Cruise (Suzhou)
West Lake boat ride (Hangzhou)

Yes, all of them are operated in January. However, it is still very cold in China at that time. For young children and the old, it is advised to stay in an indoor cabin to enjoy the scenery. There are cruises with indoor cabins in all three excursions. As for the experience, on Huangpu River Night Cruise, you can enjoy the beauty of the modern city. However, on the other two cruises, you can appreciate the old city and the natural landscape.
