Would it be better to start our trip in the middle of September?

That would have us there during the Mid-Autumn Festival and National Day, which I understand can be very crowded and hard to get around. Any advice you could give me would be much appreciated.

September is a good time to tour around most places in China, because the weather is very pleasant, neither cold or hot. However, as you said, it would be very crowded during the Mid-Autumn Festival and National Day, so you can plan your tour in early September and end before the holidays.
