Visa for Third Country Needed if No Visa Necessary?

Above it says that to 144-hour transit rules, individual must have visa for third country. If trip is:
Incoming: Paris -> Bangkok
Outgoing: Shanghai (5 days) -> Hong Kong -> Paris

Does this work without entry permit as none is needed for Hong Kong? Thank you very much for the help!
