Europe to Shanghai and back

Hi, does Europe count as one 'region?'

I have a UK passport and looking to travel from Spain, connecting in France to Shanghai.

To qualify for the transit visa, does this mean my return journey cannot be back to Europe or is it the specific country I fly from?

Europe is not one "region". The word "region" is only used to describe Hong Kong, Macau, Taiwan.
