I was planning to get the octopus card as I've understood it can be used for the other attractions like ngongping Disneyland ocean park the peak etc. can I use just one card for the both of us? And how much to you think I need to load on it? I can always refund the remaining at the airport right?

No, one card can only be used by one person, so you need to buy two.Since you will stay in the city for 6 days, you may take the subways frequently, you are suggested to load 300HKD.And yes, you can return it and get your remaining at the airport, as I know, all the service centers of subways provide the service.
