About:72-Hour Visa-Free Transit

German citizen flying from Cph to HongKong via Beijing 3hours transit.

flying from Copenhagen to Hong Kong via Beijing (to/from T3, 3-4 hours transit time). Do I need to go through border/passport control? I will stay a few days in Hong Kong before I visit other Chinese cities, should my Chinese visa be a single entry or two/multiple entries type? Thanks

You do not need to pass immigration if not leaving the airport. A single entry visa is enough.
