HSR train doesn't lead to HK yet. I suggest you take HK East Rail Line to Lok Ma Chau, and cross the immigration to Futian Checkpoint in Shenzhen. Then take local subway Longhua Line to Shenzhen North Railway Station, where you can easily take a HSR Train to Guangzhou within half an hour to experience the train.

Another choice is to take a fast train at Hung Hom to Guangzhou East within 2h. Then take HSR train to Shenzhen. After that, walk to Luohu and cross the immigration to go back to HK.

Well, as I know, there are three stations that the bullet train from Guangzhou may arrive: Shenzhen Railway station, Shenzhen North and Futian Station.
