About:72-Hour Visa-Free Transit

Hi I'm coming from London to Chongqing

but then have a two day delay from Chongqing to Auckland. But in-between I stop off at Shenzhen Bao'an International Airport will I be eligible for the 72 hour visa?

No, two stops in China automatically limits you to 24 hours. You'll need a visa to travel like that.
