Backpacking around with Roundtrip ticket?

I was going to backpack around for 2 weeks and visit several areas on my own without a specific tour or specific hotels booked in advance, how would I fulfill my visa requirements of a hotel or invite? I am an
American and would be flying in Beijing and flying out of Shanghai.
