I'll go and study in a university in China. What SIM card should I use?

And how can I apply for an unlimited surfing/net or unlimited calls/texts, thanks.

Inez, there are three operators in China, CN Mobile, CN Unicom, and CN Telecom. You need to figure out which one can be used by your cell phone.
You can buy the card and choose a suitable service package at the business hall.
