About:Hong Kong Octopus Card

We are visiting Hong Kong for 3 days in March and then 2 days in the middle of June.

We would like to use it mainly for ding dong trips and the star Ferry and a trip to the Peak, how much per person should we put on each card, and I right in thinking when we finish with it in June we can get a refund of any money left on it is this correct?

You can just purchase the Standard Octopus Card. In general, you can top up 250 HKD to 300 HKD on each card. And yes, you are right. You can get the refund when you leaving HK in June.
