Hello. Can we buy roundtrip ticket of Hong Kong Airport Express?

Will buy and use the ticket on a friday and will use the second trip on sunday?
Do I just need to tell the counter Round Trip Kowloon Station? Or I still need to tell them when is the 2nd trip?
