According to what I read in your guide, it looks to be possible to travel anywhere in the Guangdong province, including visit Shenzhen.Then within 72 hours, I would return to Guangzhou, and leave for Bangkok.Would this be possible?

Yes it's fine.If you use the 72 twov at Guangzhou you are able to travel within the whole province of Guangdong.
