If I want to use this 72-Hour Visa-Free Transit and need to stay in Beijing for business

do I need to book the flight necessarily to the 3rd country via Beijing or just to a different Chinese city?

In principle, you need to book a flight to a third country or region. You can travel like this: Italy-Beijing (72 hours)-HK-Italy.
