I am an Australian Citizen. Travelling from Melbourne to London with a stopover at Shanghai,

The stopover is about 7 hours. And on the way back from Longdon to Melbourne stopover is 8 hours.
Am I allowed to go out the airport and sightseeing? Also where do you suggested I can visit in such a short time?

You can enjoy a 72-hour visa-free stay in Shanghai airport but if you need to apply for a stay permit if you want to leave the airport.
You are suggested to visit Yuyuan Garden, East Nanjing Road, the Bund, Huangpu River, and Lujiazui Area during your two stopovers. Or the city sightseeing bus is also highly recommended. Have a nice trip!
