I think it depends on availability, but what are the chances ? I plan to go from Guangzhou to Hong Kong on Tuesd 27 of sep. Thank you

You can do it on the day of departure and as you said, it depends on the availability. The chance is very hard to say, it would be surely hard during weekends. You can have a try there, if failed to get one, you may go from Guangzhou East to Shenzhen and then from there to HK.
