About:144-Hour Visa-Free Transit

For work I need to do a trip to Shanghai. Unfortunately I cannot get a visa that quick.

Can I do Amsterdam-Shanghai 4 days there the go Shanghai-Hongkong 2 days in HK
Then back to Shanghai for 4 days and fly back to Amsterdam?

Yes, you can travel like that and you will qualify for the 144 hour free transit in Shanghai for both legs of your trip.
