Question regarding Supporting Documents for Tourist Visa

We are an American family living in Paris, France and hoping to travel to China as tourists this summer. In addition to requesting our airplane reservations and hotel bookings, it appears that the Chinese Visa Application Service Center is requesting supporting documents called "Insurance in PRC" and "Work Certificate, Income Certificate, or certificate of school in France." Can anyone explain to me what documents are acceptable as proof of insurance, and what the work or income certificate must describe? Thank you!

Insurance proove should be the receipt issued by an insurance company when you buy insurance for the tour.

Income certificate can be your salary slip or bank statement within the latest six months.

Work certificate should be your wok permit in France.
