Work in China

I have an offer to work at a hotel in PRC, they said that they would be able to get me all of the relevant documents necessary to apply for the visa. However, I'm worried that since I've never been and also don't currently have a diploma that I will run into trouble during the interview process. What do you suggest?

Mas, if your employer can get you the necessary documents: alien employment permit and invitation letter of a duly authorized unit, I don’t think you will run into trouble in getting the work Z type.
When your employer apply the alien permit and invitation letter for you, the education certificate and work experience are required. There won’t be big problems.

When applying for a China work Z type, Bachelor degree certificate (or above) is required, together with non-criminal certificate, 2-year work experience certificate and others.
It will be hard if you don't have a degree certificate.
