About:72-Hour Visa-Free Transit

Not transit but staying less than 72 hours in Shanghai with US passport

Hi, I am holding US passport and transit in Incheon to Shanghai. I will stay Shanghai for less than 72 hours and back to Incheon to Los Angeles. Can I then use the 72 hour visa?

You mean your route is like this Incheon-Shanghai-Incheon-Los Angeles, right? If yes, you are not eligible for the 72 hour free transit. You should apply for a transit G type or tourist L type ahead of time.
