About:72-Hour Visa-Free Transit

Direct transit followed by 72 hour visa

Can I use direct transit for a stopover in Shanghai (from NYC to Vietnam for 5 days), then later in the week get a 72hr free transit to Shanghai for the weekend (before returning to NYC)?

Will, yes, you can use the direct transit for your trip from NYC to Vietnam and apply for the 72 hour free transit when you return from Vietnam to NYC.
