is it possible to get a VOA on UK Passport flying into Guangzhou for a day and that same day flying into Shanghai where i will be for 3 days.

Hi Sonia, I'm afraid you can't do this. First, it's not easy to get a VOA from Guangzhou. Second, even though you can get it, you are allowed to leave Guangzhou with this VOA. So I think you need to apply for a normal visa in advance.
