1. To Disneyland: you can take bus no.E23 at Whampoa Garden, get off at Lantau Link Toll Plaza. Then transfer to bus no.R8 to the destination directly. The whole way takes around 50 mins. It costs 24 HKD per person.
To Ocean Park: You can take ferry from Hung Hom (North) Ferry Pier to North Point (West) Ferry Pier. Then take bus no.77 to Aberdeen Tunnel Toll Plaza. After that, walk southwest around 280 yards.
2. Well, you have enough time to tour around HK in these days. Maybe you can use one or two days to visit Macau. You can arrange the sightseeing in the following way.
In HK:
Nov.3: Disneyland Resort, Ngong Ping 360 & Big Buddha
Nov.4: Victoria Peak, Madame Tussauds, Central Area
Nov.5: Tsim Sha Tsui, Victoria Bay, Mong Kok

3. Neaby your hotel, there are several big shopping malls and nice restaurants. For shopping, you can go to Harbour City, the Sun Arcade and Carnarvon Plaza.
For eating, China Food Kitchen and HK Fengcheng Restaurant is highly recommended. The first one is located at No.12, Huangpu New World, No.8, Tai Fung Street. The second one is located at 2nd Floor, Huangpu New World, No.7, Tak On Street. Hope you like.
