In HK, I suggest you visit the Victoria peak, Disneyland Resort, Ocean Park, Ngong Ping 360, Victoria Bay.

As for markets, the place you stay, Mong Kok is a fine choice. There are a lot markets for clothes bags shoes and other accessories, and you can have a wide selection and god price there.
For eating, you can go to Tsim Sha Tsui area, or the Temple Street night market, where you can taste all the local foods.

I suggest you look at a tourist website for ideas. It depends on what interests you!

I disagree about TST for local foods.............TST has many more international restaurants and they tend to be expensive.

Oh, for authentic local dishes, you may go to Causeway Bay, which is a popular site for food hunting. You will find popular desert, tea, cha siu bao, roast goose and sea food. Gor for a try.
