Generally, your plan is ok, but you arrange too many things on the first day. It is impossible to cover all them in a day. Also as it is Christmas Eve, many people are in HK. The transportation may be not easy as usual. So I suggest you make a little change of your Day 1 plan:
Go to the peak & Madame Tussauds in the early morning (especially going by peak tram, you need to line up). After that, go to visit Convention Exhibition Center/Godeln Bauhinia Square and enjoy the Symphony of Lights. There will be many activities on Avenue of Stars, so you can stay till late there.
