I am in guangzhou so what metro line should i take to reach shantou?

There is no metro line leading to Shantou, you are suggested to take a long-distance bus instead.
In Tianhe Bus Station, there are buses to Shantou and the buses are available from 07:45 to 00:10. You can catch one easily upon your arrival at the bus station.
