I live in UK, I have been offered a job in China, how do I apply for a China work permit and Visa?

Chris, your employer can apply for the work permit on your behalf. You just need to give them the required documents. After your work permit is done, your employer can send it to you. Then you can apply for the Z type from the CVASC centers in UK.
