About:72-Hour Visa-Free Transit

would this mean I can't use the 72 hour Visa as I won't be leaving the airport for those 2 hours?

I am Australian, living in Korea and planning to make use of the 72 hour transit visa. The flights I am looking at go Seoul - Shanghai - Hong Kong - Seoul, but the only issue is that my flight from HK back to Seoul has a stopover in Shanghai for 2 hours.

You can use the 72h TWOV on Seoul - Shanghai - Hong Kong.

On the way back Hong Kong - Shanghai - Seoul the 72h is fine, too. Or you can use the 24h transit.
