If you plan to renew your son's passport in Australia, you should visit Chinese consulate that has jurisdiction over your city. You need to prepare these documents:
1. filled application form for Chinese passport
2. 2 recent six months passport photos. The consulate also requires a CD or DVD that contains his passport photo
3. original and copies of his passport
4. valid resident permit or visa (original and copy) in Australia

The embassy/consulate requires the presense of the applicant. Therefore, you should bring your son to the embassy.

In fact, there is another way. If you bring your son to China, his mother can help him renew his passport. The process isn't as complicated as Australia.
