Hi Hayley! You should apply from the consulate which has jurisdiction over your residence district. If it happens to you that you live in the consular district of the consulate in Christchurch, then you should apply from the embassy in Wellington.

First, prepare all documents needed: a valid passport, a photocopy of the passport, a filled-out application form with your recently-taken color bare-headed photo stuck on it, the original and photocopy of your stay permit or residence permit in NZ, and round-trip tickets and hotel reservations. Then head for the consular office and submit these documents.
