is it necessary to get a visa to visit Shenzen for one day, staying in Honk Kong as french tourist?

Jean, it's very likely that you will get the five day special VOA at the border. I think you needn't apply one in advance. Just apply for the VOA at the border. It costs CNY168 and just takes a few minutes.
